MECO Coffee Collective

We bring together local Colorado artists, crafts-people and entrepreneurs through an inviting, attractive and accessible coffee shop that is continuing to strive towards self exploration and business expansion, guided by passion and love.

MECO Coffee Collective hails from two parts of our nation, Maine and Colorado. Due to unfortunate circumstances during 2020 and 2021, the owners previous business, Monzu panini and pasta food truck, was humbly dissolved. This led to a new adventure for Isaac Olson and Shane Stinn, partners and owners of MECO. Having saved a small piece of their previous business (MECO Cheesy Bits), they set out to find a brick and mortar location that not only suited their needs and wants for growth and development but also offered a space for others in the community to gather and show case their own local, artisanal companies. Thus MECO Coffee Collective came to fruition opening its doors in early August 2021 offering a quaint space to enjoy a cup of coffee or a house made pastry as well as a brightly lit area showcasing a slew of Colorado artists and crafts-people. You can find a little piece of joy for everyone in your life or for any occasion and the owners hope to be able to continue with the Maine and Colorado merger and be able to expand their adventure and concepts back to the East Coast in the near future.
